The artisanal Ensamble Tepeztate/Cuishe/Tobala/Espadin. The Tepeztate agave grows wild on high mountainsides and is difficult to harvest. The Cuishe agave develops as a long vertical stem or trunk. The sugar is concentrated near the top where the pencas remain green and spikey. The Tobala, one of the smallest agaves has always been viewed as the "King of Wild Agave" due to its scarcity and depth of flavor.
Beautifully complex nose. Vegetal notes such as celery, eggplant and olives are brightened by grapefruit and lemon leaf accents complimented by aromas of chile pasilla, corn, ciabatta bread, and a hint of iodine.
