Medium to deep garnet-purple in color, the 2018 Cabernet Sauvignon Palermo gives up gregarious scents of kirsch, Black Forest cake and warm cassis with hints of dried mint, dark chocolate and rose hip tea plus a waft of unsmoked cigars. Medium to full-bodied, the palate is packed with ripe black berry layers, framed by velvety tannins and a lively line, finishing long and fragrant. 29,674 cases were made.

Poured as a dark garnet, the wine opens with primary aromas of ripe cassis and blackberry. Supporting hints of dark chocolate, toasted oak and cedar support the typical Orin Swift Cabernet Sauvignon nose. The entry is flooding with notes of dark fruits and a mid-palate bolstered with redcurrant, bay leaf and a reemergence of cassis. The wine closes with well-developed tannins and a striking minerality despite the supple and soft finish.

Cabernet Sauvignon

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbec and Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
