Gilgal Brut is an elegant, traditional-method sparkling wine from one of Israel's most respected kosher producers, sourced from the high-elevation vineyards of the Golan Heights. Made by Golan Heights Winery — the trailblazing producer that helped revolutionize Israeli winemaking — Gilgal is the entry-level traditional method bubbly that punches well above its price. The wine is crafted using the same Méthode Champenoise process as Champagne, with second fermentation in bottle and extended lees aging that builds genuine depth and complexity. The pour shows a pale gold hue with fine, persistent bubbles. The nose offers crisp green apple, lemon zest, white flowers, and a soft thread of brioche and toasted almond from the lees aging. On the palate, the wine is dry, lively, and beautifully balanced with bright acidity, creamy texture, and a clean, mineral-driven finish.
