Following harvest, the grapes from each vineyard are carefully sorted and destemmed before being fermented in separate lots to preserve their unique qualities. Each lot is then aged in oak barrels for 18 months, during which the barrels are regularly tasted to monitor tannin and flavor development. This attentive process ensures that the wine achieves the perfect balance of structure and complexity. Finally, the individual lots are thoughtfully blended to harmonize the distinct characteristics of each grape-growing region, resulting in a rich and well-rounded Cabernet Sauvignon that reflects the dedication and expertise behind its creation.
