Peller Estates Oak Aged Icewine is a luxurious Canadian icewine from one of the world's most celebrated icewine producers — Peller Estates, based in the Niagara Peninsula, Ontario, Canada. Icewine is a uniquely Canadian specialty made by leaving grapes on the vine until temperatures drop below -8°C (around 17°F), at which point the frozen grapes are hand-harvested and pressed while still frozen, concentrating the natural sugars into an extraordinary nectar. The Oak Aged version adds extra depth, vanilla character, and structural complexity from time spent in barrel. The pour reveals a stunning amber-gold hue with subtle viscosity. The nose explodes with concentrated tropical fruit, dried apricot, honey, vanilla, candied orange peel, and warm baking spice. On the palate, expect a luxuriously sweet but beautifully balanced pour with vibrant acidity that prevents any cloying character. The finish is exceptionally long with lingering honeyed fruit and warm vanilla. Best served well-chilled in a small glass paired with foie gras, blue cheeses, fresh fruit tarts, or simply enjoyed slowly at the end of a memorable meal.
